"The grapes are discharged in to the membrane press, where the must is extracted without crushing. The must is cooled and decanted and discharged into a steel tank where fermentation performs. After fermentation, the wine is decanted naturally in the deposit, being engrised by the end of the year, when preparing to do the bottling of sparkling wine, go to the cellar and will make a bottle-fermentaed at a controlled temperature and obsence of light. After fermentation the bottles are in the basement, ageing until the stirring and degourgement is done, time from which the product is ready for the market." -Winery notes
