Stargazer Riesling, Tasmania 2019
Hand harvested in two picks, both picks were destemmed and left in contact with skins for about eight hours prior to gentle pressing. The majority was a wild fermented (by indigenous yeasts) in stainless steel over a month; 25% was fermented in older wild oak. The stainless-steel ferments were arrested on 7 June 2019 and left on lees for close to three months with lees stirring fortnightly. The nose is floral and lifted, showing waxy white flowers; gardenias and jasmine. In the background is pink grapefruit and kaffir lime spiciness. The acid provides structure, drive and backbone to the palate, while the tangy exit is balanced with a judicious touch of residual sugar.
